Now in its thirty second year Bridfish has expanded its range form smoked trout, for which the company was originally set up to process,to such delicacies as smoked Eel,cod roe and the more humble varieties such as smoked mackerel and kippers.
Although smoking fish is the main part of the business,cheese and meat are also smoked, albeit to a much smaller degree.
Traditional methods are used and the use of oak sawdust enhances the delicate flavours ,apart from salt no additional dyes or additives are included in the process.
The shop at the smokery premises serves as their main retail outlet but they also attend various farmers markets, sell via mail order, to caterers and through farm shops, butchers ,fishmongers and delicatessens.
